Chef Nik, the talented native of the Turks and Caicos Islands (TCI),  is always bursting with enthusiasm and energy for cooking.

Nikita O’Neil Skippings, affectionately known as Chef Nik, is the executive chef  the popular Crackpot Kitchen Restaurant Bar and Grill. He is also the star of Crackpot Kitchen Cooking Show, the first cooking show aired in the TCI on WIV channel 4, PTV channel 8 and Tropiks TV . 

With a passion for food and cooking, Chef Nik began his cooking career over a decade ago. He started as an apprentice of his father, a well-known chef and owner of "Smokey's Restaurant" in the Turks and Caicos Islands. There he worked under the strict tutelage of  a Scottish chef and acquired many of the qualities vital to be a success in the restaurant industry.

Nik went on to work in numerous restaurants specializing in International cuisine.  He was trained to create innovative Italian, Tex Mex, Oriental, Seafood and French while employed by the presitigious Beaches Turks and Caicos Resort and Spa in the Turks and Caicos Islands.

Chef Nik created menus with a twist on Authentic Turks and Caicos and Caribbean Cuisines for a number of popular restaurants. He expanded his business to offer catering services aboard expedition yachts along with private catering and private chef services for numerous celebrities. He always had the dream of having an ownership role in a restaurant in the Turks and Caicos Islands.  With the help of co-owner, Steve Nolan of Lincoln, Nebraska, this dream was made reality when Crackpot Kitchen Reastaurant Bar and Grill opened.

Chef Nik has won awards and medals in various culinary competitions and has earned a strong reputation and large fan base in the community. He has worked tirelessly to  promote the national dishes of the Turks and Caicos Islands. Chef Nik loves to share, which makes him an excellent ambassador for TCI cooking, and by extension, TCI culture.  On July 1st 2015 he was honored to be named the first Turks and Caicos Islands Culinary Ambassador

As Culinary Ambassador, Nik's primary objective is to showcase and promote the cuisines of this country, both locally and internationally. Cooking isn’t a job for him, it’s a passion. This passion shows in all his different culinary businesses and roles.

Chef Nik has introduced a line of Tropical Flavored Barbecue Sauces; Crackpot Kitchen Tropical Tamarind Gourmet Sauce and Crackpot Kitchen Tropical Guava Barbecue Sauce. Both sauces have been overwhelmingly popular in the Turks and Caicos Islands.  Consumers rave about their unique textures and explosive flavors. Under the guidance of Steve Nolan, Crackpot Kitchen Sauces have recently been brought to the United States where they are available in several
major grocery store chains.
